Summer Salad-A Quick & Easy Recipe (with no cooking!)

Summer is here! With the first day of summer happening last week, our family is in full on summer mode! Music Man is busy with summer music festivals, camp-type programs and preparing for the Fall Semester, The Eldest is working hard at her first summer job, The Younger has plans to go visit family and lots of summer homework to work on, The Maestro is enjoying more time outside at the beach, in the sprinkler and the playground…all while trying to convince us he only needs to sleep when the sun is down! I don’t think so kiddo! And Mama over here has been busy keeping up with all of them-and keeping them fed!

If you’re like me, once summer hits, the urge to cook leaves. It’s already hot outside, so why do I want to spend all my time in the kitchen over hot burners and a hot oven? That’s why I love my newest recipe-this summer salad is basically a meal in itself. And requires NO COOKING! Yay! Even better-you make a big batch and store it in the fridge for when the kids demand their second breakfast or third lunch or fifth snack! And with all these fresh summer veggies, you can be happy about them eating something healthy!

PS-This is a great way to use up produce before it turns-as a matter of fact, that’s what inspired this recipe!

SUMMER SALAD

Pretty dishes make happy tummies!

Ingredients:

  • 1 large tomato, diced into 1/2 inch pieces
  • 1 large cucumber, halved and sliced (check your cucumbers and preferences-many types don’t require peeling!)
  • 3 medium stalks of celery, cut into 1/4 inch pieces (or about one cup total)
  • 2 cans of tuna fish in water, drained
  • 1/3 cup of mayonaise
  • 1 TBSP capers, drained
  • 2 tsp Mrs. Dash, or any other salt-free seasoning mix you enjoy!

Simply add all the ingredients to a bowl and mix. That’s it! Easy, peasy and dinner (or lunch) is done! I served mine on lettuce for a nice filling salad, but you can eat it as-is, or serve with crackers or anything else you might have on hand (a piece of nice crusty bread would be great as well!)
